This gluten free oat bread is my absolute favourite bread to eat, gluten or no gluten (well ok, it ties with Mom’s homemade white bread but that goes without saying). I mostly have it for breakfast with lots of stuff on it like parma ham, nice cheeses and vegetables, eggs, avocado. Let your imagination go wild!
It only takes about an hour and a half to make, requires no kneading or rising. So not only is it my favourite to eat, it is also my favourite to make! I urge you to try it! You won’t regret it and you stomach will thank you.

This recipe is obviously made with ingredients found here in Brazil but the recipe should work fine with substitutes.

Gluten free Oat bread
Ingredients
2 cups oat flour
1 cup rolled oats
2 tsp baking soda
1 1/4 tsp salt
1/2 cup linseeds
2 ägg
1 1/2 cups yoghurt
Method
- Set the oven on 180 degrees celsius. Line a 1 1/2 L bread pan with parchment paper.
- Mix all dry ingredients in a mixing bowl.
- In another bowl, whisk eggs fluffy and add the yoghurt.
- Mix egg mixture with dry ingredients to a lumpy porridge-like batter.
- Pour mixture in bread pan and bake in bottom half of oven for about 1h or until interior measures 100 degrees celsius.
- Let cool, cut and enjoy!
Tip! Slice and freeze in ziplock bags. To enjoy thaw by heating slices up in a pan with olive oil.
Pão de aveia sem glúten
Ingredientes
2 copos de farinha de aveia
1 copo de flocos de aveia
2 colheres de cha de bicarbonato de sódio
1 1/4 colheres de cha de sal
1/2 copo de linhaça
2 ovos
1 1/2 copos de coalhada
Modo de preparo
- Pré-aquecido a forna á 180 graus. Forrar uma panel de pão (1 1/2L) com papel antiaderente tipo Dover Assa+Leve.
- Coloca tudos os ingredientes secos em um tigela e misture.
- Em uma outra tigela bata os ovos e adicione a coalhada.
- Misture a mistura de ovos com os ingredientes secos. Parece um mingau.
- Colocar a mistura na panela e colocar para assar em forno por cerca de 60 minutos ou quando o interior esta 100 graus.
- Deixar esfriar, corte e aproveite!
Dica! Corte e congele em um sacinho. Para aproveite de novo, derreter numa panela com um pouco de azeite.
